be brought together in a single makgeolli?
Everything Makgeolli began with that question.

In the spring of 2025, Hana Makgeolli,
a Brooklyn-based brewery dedicated to
traditional Korean rice wine, came to Korea.
Brooklyn and Gwangalli may be far apart,
but the two places share an unexpected resemblance.
Both sit by the water, both foster new cultures, and
both bring people together through food and drink.
Founded in Brooklyn, New York, in 2020,
Hana Makgeolli brews traditional makgeolli using
organic California-grown rice and traditional nuruk,
without artificial additives.
Through its brewery and tasting room,
it continues to introduce new possibilities
for Korean alcohol in New York.
The tasting room also offers New Yorkers
a rare chance to experience Korean rice wine
up close. For anyone involved in makgeolli
brewing in Korea, Hana Makgeolli is likely a familiar name.
It was a brewery we had wanted to meet
for a long time, so their visit felt especially meaningful.

We invited Hana Makgeolli founder Alice Jun
to Busan for From Brooklyn to Gwangalli,
a conversation exploring the stories behind
our breweries. Together, we talked about her journey
to brewing makgeolli in New York, how Hana
introduces Korean rice wine to Brooklyn,
and what it means to make traditional alcohol
in Busan today.
But the meeting didn't end with the talk.
Long before the event, our two breweries
had already begun imagining a makgeolli together.
We kept asking ourselves the same question:
What kind of drink could truly belong
to both Busan and New York?
The answer began with an Everything Bagel.
Onions, garlic, and sesame seeds.
In New York, they're the signature toppings of
an everyday bagel. In Korea, they're familiar
ingredients found on countless dining tables.
What seemed like two different food cultures
turned out to share the same everyday flavors.
We wanted to bring that shared language
into a bottle of makgeolli.

That was how Everything Makgeolli came to life.
Built on Hana Makgeolli's traditional brewing
methods and shaped by GGULGGEOK HOUSE's
creative vision, the makgeolli captures the sweetness
of onion, the savory depth of garlic, and
the nutty richness of toasted sesame.
Inspired by New York's everything bagel and
the everyday Korean table, Everything Makgeolli
became a meeting point between Brooklyn and
Gwangalli—a collaboration that brings two cities and
two food cultures together in a single bottle.

On August 8, 2025, Everything Makgeolli
was released simultaneously
at Hana Makgeolli Tasting Room in Brooklyn,
New York, and GGULGGEOK HOUSE Brewpub
in Gwangalli, Busan.
Looking back, Everything Makgeolli was more than
a collaborative brew—it was a meeting of places,
people, and ideas.
It brought together cities, connected cultures, and
created a shared table through makgeolli.
More than the flavors of an everything bagel,
it carries the spirit of Busan and New York,
of Brooklyn and Gwangalli, and of everyone
who came together to brew it.
Perhaps that's what the name
Everything truly means—
and the flavor that lingers the longest.
