

Our brewery occupies just over 10 pyeong
(about 33 square meters). Within this modest space,
every GGULGGEOK HOUSE makgeolli
is brought to life.
From brewing and product development to
quality analysis, bottle washing, filling,
packaging, and all the countless tasks
in between, every step happens here.
When we first designed the brewery,
the limited space meant every decision mattered.
We spent countless hours refining the workflow
and arranging the equipment,
making the most of every corner.
It's a challenge every brewery knows well,
but this little space is the result of
all those careful considerations.

With the mindset of a homebody
who believes the less you have to move,
the better, we planned every inch of
the brewery for maximum efficiency.
The space is divided into three main areas:
the fermentation room, the cold-aging room,
and the bottling room. Stand in the middle,
turn left once, and you're in the fermentation room.
Turn left again, and you've reached the aging room.
It's that small... or rather, that compact.

GGULGGEOK HOUSE holds licenses
to produce both takju and yakju,
with each fermentation tank sized to meet
the production standards for its respective license.
Our brewery is built around eight primary
fermentation tanks: four conical fermenters and
four cylindrical tanks equipped with an in-house
temperature control system.
Because the conical fermenters don't have individual
temperature control, we regulate fermentation
by controlling the climate of the entire
fermentation room. Whether it's the height of
summer or the middle of winter, the room is kept
at a consistently cool temperature so the yeast
can work at its best.
From the first stages of fermentation to the essential
brewing processes that follow, this is where
every batch of our makgeolli begins.

Every batch begins with rice.
We wash it, soak it, drain it, and steam it
into perfectly cooked godubap (steamed rice).
Once it's ready, the rice is cooled before being
combined with water and nuruk,
then transferred to the fermentation tanks
where the brewing process begins.
Because much of the work takes place in
an open environment, cleanliness is essential.
The brewery is carefully designed
with proper sanitation, ventilation, and
pest control to protect every batch.
Running water and electricity are indispensable,
and because brewing requires constant use of water,
the floors and walls are finished with waterproof,
condensation-resistant materials to prevent mold and contamination.

Tucked into one corner of the fermentation room
is a small laboratory, where we monitor every batch
through both scientific analysis and sensory evaluation.
Here, we measure sugar content and acidity,
analyze alcohol levels through distillation, and
taste each batch ourselves to make sure everything
is developing as it should. Some days, when there are
more samples than usual, we end up tasting
quite a few glasses—and every now and then,
we leave the lab just a little lightheaded.
Once fermentation is complete, the makgeolli
is moved to our cold-aging room for
a second period of maturation.
There, at temperatures below 5°C (41°F),
it rests for weeks or sometimes even months.
As the wine slowly chills, unwanted sediment settles,
and the sharper edges of its aroma and
flavor soften into balance.
We simply want every bottle to meet you
in its most refined form.

GGULGGEOK HOUSE is still a small brewery.
Compared to larger producers,
our scale is modest. But we believe that
being small allows us to do things in our own way.
We collaborate with local makers, artists,
and producers, creating projects together and
bringing flexible, unexpected ideas to life.
We're a brewery, but we also hope to be
something more—like a neighborhood gathering
place, where anyone can drop by, share a glass of
makgeolli, and lose themselves in easy conversation.

What could be more exciting than
becoming a brewery deeply loved by
its neighborhood? That is what we hope for.
To share, enjoy, and grow together.
To ferment well without ever losing our integrity.
To care for the small and seemingly
insignificant things, and help them flourish.
